During the holidays, we always want to prepare something special, but realize we can’t do it all at once. We need to find ways to create dishes that we can prepare ahead of time and then just defrost or warm up before serving. Let’s face it people, we aren’t a restaurant, although sometimes that’s what I feel like. Maybe I should start charging my guests? Hehe
ANYWAYS, I had some left over pie dough and thought why not make a fun appetizer for a holiday gathering. Pie dough is really easy to make and so easy to work with.
I simply rolled out the dough cut out a circle and created a wreath. You can easily create anything, about a candy cane? Or a Christmas tree? Ideas are limitless!
What’s important are the ingredients, the rest is up to you.
Pear and Feta Wreath
Ingredients
- 1 pear
- 1/2 cup of crumbled feta (a little more if you like)
- 1/2 teaspoon of organic cinnamon
- a drizle of olive oil (about 1/2 a tablespoon)
- a touch of salt and pepper
- a squeeze of lemon juice (to avoid the pear turning brown)
- 1 pie dough
- 1 egg (to brush over the dough)
Directions:
- In a bowl, slice the pear into thin small pieces (rectangles, triangles, whatever you like!)
- Combine the crumbled feta, cinnamon, olive oil, salt, pepper and lemon juice in a bowl and set aside.
- Take your pie dough and with a rolling pin, roll it to about 1/8 inch thickness.
- (Optional) Using a dinner plate, cut about a 1/2 inch around it to make it a more even circle.
- Using a wide drinking glass, create another circle in the middle and you should be left with a donut.
- Repeat the instructions so that you have two of the same thing (if the top layer is a little smaller it’s ok)
- Lay the bottom layer dough on a piece of parchment paper on a baking pan.
- Place the filling in the centre all around the wreath
- Lay the top layer over the filling, making sure the two circles line up.
- Take the bottom layer dough and fold over the top layer, while pinching it at the same time.
- Brush a beaten egg over the dough and bake for 30 minutes at 375 degrees.
- If you baked it earlier in the day, just quickly warm it up at 350 degrees for 5-7 minutes before serving.
Enjoy!
